How about starting your day with a delicious egg bake (with a twist)? Transform it into a 'pie' or 'quiche' by using a tortilla as a base. All made in one pan so no hassle + it's packed with protein!

  • 2 eggs

  • 1 egg white

  • ½ cup cottage cheese

  • 2 slices of cheese (we used Havarti)

  • ½ cup spinach

  • 1 tomato diced

  • 1 whole wheat/low-carb tortilla

Begin by placing a tortilla in a baking-safe pan or dish. Layer the tortilla with cheese slices or grated cheese. Crack 2 eggs directly on top of the cheese, then dollop cottage cheese over the eggs. Use a fork to gently combine the eggs with the cottage cheese. Sprinkle diced tomato, spinach, and sesame seeds (if desired) over the top. Bake at 350°F (175°C) for approximately 20 minutes, or until the eggs are set and the edges of the tortilla are golden brown.
