  • 1 cup cottage cheese

  • 1 tsp pesto

  • 2 slices of cheese

  • ½ cup spinach

  • ½ carrot

  • 1 slice of pickle

  • 2 tsp sauce

To make the 'bread,' simply spread the cottage cheese on parchment paper, season with oregano (optional) and bake at 350F/175C for 30-40 minutes until the edges start to crisp up.

For the sandwich spread pesto on one half of 'the bread', and top with spinach, carrot, cheese, pickle and sauce.
